  • Medium mustard4 tbsp
  • Streaky bacon slices6
  • Onions, finely chopped2
  • Gherkins, cut in strips3
  • Oil2 tbsp
  • Carrot1
  • Tomato paste1 tbsp
  • Beef stock750 ml
  • Cornflour1 tbsp
  • Salt1 1/2 tsp
  • Black pepper1/2 tsp

Method

  1. FillSpread each slice with mustard; lay on bacon, onion and a gherkin strip; roll up and secure with string or toothpicks.
  2. BrownBrown the rolls in oil; add carrot and tomato paste.
  3. BraisePour in stock; cover and braise 1 1/2 hours.
  4. SauceRemove rolls, thicken the sauce with cornflour.
  5. ServeServe with the sauce, potatoes and red cabbage.
