Method

  1. ChhenaCurdle boiling milk with lemon; drain in muslin; knead until smooth.
  2. CookFlatten into discs; cook in syrup 12 minutes.
  3. MilkReduce milk by half with sugar, saffron and cardamom.
  4. SoakSqueeze discs; soak in the milk; chill; garnish with pistachios.
