  • Beef round (for pašticada)1.5 kg
  • Pancetta (for larding)100 g
  • Carrots3
  • Parsnip or parsley root1
  • Dried plums (prunes)10
  • Red wine vinegar250 ml
  • Tomato paste2 tbsp
  • Prošek (sweet wine)200 ml
  • Cloves4
  • Nutmeg1/4 tsp
  • Olive oil4 tbsp

  • Parsley1 handful
  • Bay leaves2
  • Salt1 1/2 tsp

  • Potatoes, floury1 kg
  • Plain flour300 g

Method

  1. LardLard the beef with garlic, carrot and pancetta; marinate in vinegar overnight.
  2. BrownBrown the beef well; remove.
  3. VegBrown onion, carrot, root and prunes.
  4. BraiseReturn beef with tomato paste, prošek and water; braise 4 hours.
  5. SauceBlend the vegetables into a thick sweet-sour sauce; slice the beef.
  6. GnocchiMash boiled potatoes with flour and egg; roll and cut gnocchi; boil until they float.
