Method
- FriesCut potatoes into thick fries, soak, and double-fry: 150C for 6 minutes, then 190C until crisp.
- GravyCook butter and flour to a brown roux; whisk in stocks and simmer 10 minutes until thick.
- ToppingWarm the beef.
- AssemblePile hot fries, scatter squeaky cheese curds and pour over hot gravy so the curds just soften.
