Ingredients

For 8 servings. All ingredients are generic, never brand names.

  • Strudel dough (or 4 filo sheets)250 g
  • Butter, melted100 g
  • Icing sugar2 tbsp
  • Quark (Topfen)500 g
  • Eggs, separated3
  • Sugar100 g
  • Sour cream150 g
  • Lemon zest1 lemon
  • Vanilla1 tsp
  • Raisins50 g

Method

  1. FillingBeat the quark, yolks, half the sugar, sour cream, zest and vanilla; fold in whites beaten with the rest of the sugar, and the raisins.
  2. StretchStretch the dough paper-thin over a floured cloth and brush with butter.
  3. RollSpread the filling over one third and roll up with the cloth; place seam-down on a tray.
  4. BakeBrush with butter. Bake at 190C for 35 minutes.
  5. ServeDust with icing sugar and serve warm with whipped cream or vanilla sauce.
