Ingredients

  • Caster sugar150 g
  • Self-raising flour150 g
  • Butter, melted40 g
  • Milk3 tbsp
  • Icing sugar400 g
  • Cocoa powder40 g
  • Butter20 g
  • Boiling water150 ml
  • Desiccated coconut250 g
  • Thickened cream, whipped300 ml
  • Raspberry jam1/2 cup

Method

  1. SpongeBeat eggs and sugar 8 minutes until thick, fold in flour, then butter and milk; bake in a 20 x 30 cm tin at 180C for 25 minutes.
  2. ChillCool, then chill the sponge 1 hour so it cuts cleanly into 5 cm squares.
  3. CoatWhisk the icing sugar, cocoa, butter and water; dip each square, then roll in coconut and set on a rack 1 hour.
  4. FillSplit the coated lamingtons and fill with jam and whipped cream just before serving.
