
Kimchi Jjigae
Sour aged kimchi stew with pork and tofu, deeply savoury.

Ingredients
- 3 cups Aged kimchi
- 300 g Pork belly
- 1 block Tofu
- 1 Onion
- 3 Spring onions
- 1 tbsp Fermented chili paste
- 1 tbsp Chili flakes
- 4 cloves Garlic
- 1 tbsp Sesame oil
- 3 cups Water
- 1 tsp Sugar
Method
- Fry the pork — Cook the sliced pork belly in a pot until the fat renders and the edges brown.
- Add the kimchi — Add the chopped kimchi and stir-fry for 5 minutes until it softens and darkens.
- Season — Stir in the chili paste, chili flakes, garlic and sugar.
- Simmer — Pour in the water and the kimchi juice and simmer for 20 minutes.
- Add tofu — Slide in sliced tofu and simmer 5 minutes more without stirring.
- Kimchi Jjigae is ready — Finish with sesame oil and spring onions, and serve bubbling with rice.
