Boiled pork belly wrapped in cabbage with radish salad.

Ingredients
- 1.2 kg Pork belly
- 3 tbsp Fermented soybean paste
- 3 tbsp Ginger
- 8 cloves Garlic
- 1 Onion
- 2 tbsp Coffee
- 500 g Radish
- 3 tbsp Chili flakes
- 2 tbsp Fish sauce
- 1 Napa cabbage
- 1 tbsp Sugar
- 8 cups Water
Method
- Boil the pork — Simmer the whole belly with soybean paste, ginger, garlic, onion and a spoon of coffee for 90 minutes — the coffee and paste remove any porkiness.
- Test — A skewer should slide in with no resistance.
- Rest — Let it sit in the liquid 15 minutes, then slice thickly.
- Make the radish salad — Julienne the radish and toss with chili flakes, fish sauce, garlic and sugar.
- Prepare the leaves — Separate and blanch the cabbage leaves.
- Bossam is ready — Wrap a slice of pork and a pinch of radish salad in each leaf and eat in one bite.
