
Cannoli
Fried pastry tubes filled with sweet ricotta.

Ingredients
- 2 cups Flour
- ½ cup Marsala wine
- 3 tbsp Butter
- ¾ cup Sugar
- 500 g Fresh cottage cheese
- 100 g Dark chocolate
- ½ cup Pistachios
- 1 tbsp Cocoa powder
- 4 cups Frying oil
- ½ tsp Salt
Method
- Make the dough — Mix the flour, sugar, cocoa, salt, butter and marsala into a firm dough and rest 1 hour.
- Drain the ricotta — Hang the ricotta in cloth overnight — wet ricotta will make the shells soggy within minutes.
- Roll and wrap — Roll the dough paper-thin, cut circles, and wrap around metal tubes, sealing with egg white.
- Fry — Fry at 180°C for 2 minutes until blistered and golden, then slide off the tubes and cool.
- Make the filling — Beat the drained ricotta with sugar and fold in chopped chocolate.
- Fill at the last moment — Pipe the filling only just before serving.
- Cannoli are ready — Dip the ends in pistachio and dust with sugar.
