
Moqueca
Coconut and palm oil fish stew from Bahia.

Ingredients
- 800 g White fish fillets
- 400 ml Coconut milk
- 3 tbsp Red palm oil
- 3 Tomatoes
- 2 Onions
- 2 Bell peppers
- 4 cloves Garlic
- 3 tbsp Lime juice
- 1 cup Coriander
- 2 tsp Salt
Method
- Marinate the fish — Season the fish with lime juice, garlic and salt and rest for 30 minutes.
- Layer the pot — Lay sliced onion, tomato and pepper across the base of a wide pot.
- Add the fish — Set the fish over the vegetables and cover with another layer of vegetables.
- Add the liquid — Pour the coconut milk and palm oil over everything.
- Simmer gently — Cover and cook on low heat for 20 minutes without stirring, so the fish stays whole.
- Moqueca is ready — Scatter with coriander and serve with rice and farofa.
