
Pão de Queijo
Chewy cheese breads made from tapioca flour.

Ingredients
- 3 cups Tapioca flour
- 1 cup Milk
- ½ cup Oil
- 2 Eggs
- 1½ cups Hard cheese
- 1 tsp Salt
Method
- Scald the liquid — Bring the milk, oil and salt to a boil.
- Make the dough — Pour the hot liquid over the tapioca flour and mix — it will look lumpy and strange, which is correct.
- Cool and enrich — Let it cool to warm, then beat in the eggs one at a time until smooth and sticky.
- Add the cheese — Work in the grated cheese until evenly combined.
- Shape — Roll into small balls with oiled hands and set on a lined tray.
- Bake — Bake at 200°C for 20 minutes until puffed and golden.
- Pão de Queijo is ready — Eat warm, while they are still chewy inside.
