
Feijoada
Black bean and pork stew, Brazil's national dish.

Ingredients
- 3 cups Black beans
- 500 g Pork ribs
- 300 g Smoked sausage
- 200 g Bacon
- 400 g Beef
- 2 Onions
- 6 cloves Garlic
- 3 Bay leaves
- 1 Orange
- 3 tbsp Oil
- 2 tsp Salt
- 8 cups Water
Method
- Soak the beans — Soak the black beans overnight and drain.
- Start the pot — Simmer the beans with bay leaves and water for 1 hour.
- Brown the meats — Fry the bacon, sausage, ribs and beef in batches until well browned.
- Build the base — Cook the onion and garlic in the same pan until soft.
- Combine — Add all the meats and the onion base to the beans and simmer for 2 hours until thick and dark.
- Brighten it — Add orange wedges for the last 20 minutes, then remove them.
- Feijoada is ready — Serve with rice, sautéed greens and orange slices.
