Ingredients

  • Firm white fish steaks1 kg
  • Onions2
  • Garlic cloves4
  • Ginger1 thumb
  • Tomatoes3
  • Ghee or oil4 tbsp
  • Salt2 tsp
  • Water1.2 L
  • Bzar (Gulf spice mix)2 tbsp
  • Loomi (dried black lime), pierced2
  • Cinnamon stick1
  • Cardamom pods4
  • Turmeric1 tsp
  • Basmati rice, soaked 30 minutes500 g

Method

  1. OnionsFry 2 sliced onions in ghee until deep golden.
  2. BaseAdd garlic, ginger, tomatoes, bzar, loomi and whole spices and cook 5 minutes.
  3. MainRub the fish with turmeric and salt, fry until golden and simmer the heads/trimmings in the water 20 minutes for broth.
  4. RiceAdd the drained rice to the broth (about 1.5 times its volume), cover and cook on low 25 minutes.
  5. ServeServe on a platter with the meat or fish on top and daqoos tomato sauce.
