Method

  1. TenderisePound the conch thin with a mallet (or pressure-cook 25 minutes if stewing).
  2. ChowderFry the salt pork, add onion, celery and carrot, then tomatoes, paste, thyme, goat pepper and stock; simmer with the potatoes 25 minutes.
  3. ConchAdd the chopped conch and simmer 30 minutes.
