Method

  1. SaltSalt the aubergine slices and rest 20 minutes, then pat dry.
  2. FryFry until golden on both sides and drain on paper.
  3. LayerLayer aubergine, onion, tomato and chilli in the pan, add turmeric, salt and 1/2 cup water and cook covered 20 minutes.
  4. ServeSpoon garlic yogurt over and scatter dried mint.
