
Käsknöpfle
Small dumplings tossed with mountain cheese and fried onion.

Ingredients
- 3 cups Flour
- 4 Eggs
- ¾ cup Milk
- 400 g Melting alpine cheese
- 3 Onions
- 5 tbsp Butter
- 1 tsp Nutmeg
- 2 tsp Salt
- 1 tsp Black pepper
- 4 L Water
Method
- Make the batter — Beat the flour, eggs, milk, salt and nutmeg into a thick sticky batter and rest 20 minutes.
- Form the knöpfle — Press the batter through a colander or spätzle press straight into boiling salted water.
- Cook — They are done about 1 minute after they float; lift them out with a slotted spoon.
- Fry the onions — Cook the sliced onions slowly in butter for 20 minutes until deep golden.
- Layer with cheese — Alternate hot knöpfle and grated cheese in a warm bowl so the cheese melts between the layers.
- Käsknöpfle is ready — Top with the onions and serve with apple sauce.
