
Nyama choma
Goat or beef slow-roasted over charcoal, served with kachumbari.

Ingredients
- 1.5 kg Goat meat
- 6 cloves Garlic
- ¼ cup Lemon juice
- 2 tbsp Salt
- 1 tbsp Black pepper
- 3 Tomatoes
- 1 Red onion
- ½ cup Coriander
- 1 Chili
Method
- Season simply — Rub the meat with salt, pepper, garlic and lemon — nyama choma relies on the fire, not the marinade.
- Build the fire — Burn charcoal down to steady glowing embers with no flame.
- Roast slowly — Cook the meat over indirect heat for 1½ hours, turning every 15 minutes.
- Finish direct — Move over the hot coals for the last 10 minutes to crisp the outside.
- Make kachumbari — Dice the tomato, onion and chili and dress with lemon, salt and coriander.
- Nyama Choma is ready — Chop on a board and serve with kachumbari and ugali.
