
Nasi Goreng
Indonesia's national fried rice, sweet-savoury with kecap manis and a fried egg.

Ingredients
- 4 cups Cooked rice
- 3 tbsp Sweet soy sauce
- 4 Shallots
- 3 cloves Garlic
- 2 Red chilies
- 1 tsp Shrimp paste
- 200 g Chicken
- 2 Eggs
- 2 Spring onions
- 3 tbsp Oil
- 1 tsp Salt
Method
- Make the paste — Pound the shallots, garlic, chilies and shrimp paste into a rough paste.
- Fry the paste — Heat the oil and fry the paste for 2 minutes until deeply fragrant.
- Add the chicken — Add the diced chicken and cook until it colours.
- Add the rice — Tip in the cold cooked rice and toss over high heat, breaking up any clumps.
- Season — Pour in the sweet soy sauce and salt and keep tossing until every grain is coated and glossy.
- Fry the eggs — Fry the eggs separately, keeping the yolks soft.
- Nasi Goreng is ready — Serve topped with a fried egg and sliced spring onions.
