
Feteer Meshaltet

Ingredients
- 4 cups Flour
- 1½ cups Water
- 250 g Ghee
- 2 tsp Salt
- ¼ cup Honey
Method
- Make the dough — Knead flour, water and salt for 10 minutes until very smooth, then divide into balls and coat in ghee.
- Rest — Leave 1 hour under oil so the gluten fully relaxes.
- Stretch — Stretch each ball on a greased surface until nearly transparent — this is the whole skill of feteer.
- Fold — Brush with ghee and fold into a square, then stack the squares on top of each other.
- Roll — Roll the stack out gently into a round.
- Bake — Bake at 230°C for 25 minutes until the layers puff and brown.
- Feteer is ready — Serve hot with honey or cheese.
