
Dan Dan Noodles
Sichuan noodles with chili oil, sesame and minced pork.

Ingredients
- 400 g Noodles
- 300 g Ground pork
- ¼ cup Sesame paste
- ¼ cup Chili oil
- 1 tbsp Sichuan peppercorns
- 3 tbsp Soy sauce
- 2 tbsp Black vinegar
- ¼ cup Preserved mustard greens
- 4 cloves Garlic
- 4 Spring onions
- 1 tsp Sugar
- ¾ cup Chicken stock
Method
- Toast the peppercorns — Dry-toast the Sichuan peppercorns until fragrant, then grind — this numbing tingle is the point of the dish.
- Fry the pork — Cook the pork hard with the preserved greens until dry and crisp at the edges.
- Make the sauce — Whisk the sesame paste with soy, vinegar, chili oil, garlic, sugar and stock until smooth and pourable.
- Cook the noodles — Boil until just tender and drain.
- Assemble — Put the sauce in the bottom of the bowl, noodles on top, then the pork.
- Dan Dan is ready — Add ground pepper and spring onion; toss thoroughly at the table before eating.
