
Char Siu Bao
Steamed buns filled with sweet barbecue pork.

Ingredients
- 4 cups Flour
- 2 tsp Yeast
- ½ cup Sugar
- 1 cup Milk
- 1 tsp Baking powder
- 400 g Roast pork
- 2 tbsp Oyster sauce
- 2 tbsp Soy sauce
- 1 tbsp Sesame oil
- 2 tbsp Cornstarch
- 1 Onion
- 2 tbsp Oil
Method
- Make the dough — Knead flour, yeast, sugar, milk and oil into a soft white dough and prove 1 hour.
- Make the filling — Dice the char siu and cook with onion, oyster and soy sauces, thickening with cornstarch; cool completely.
- Add baking powder — Knead it into the risen dough — this is what gives the buns their split-open crown.
- Fill — Roll discs thicker in the centre, add cold filling, and pleat closed.
- Prove again — Rest on paper squares 30 minutes.
- Steam — Steam 12 minutes over high heat without lifting the lid.
- Char Siu Bao is ready — Serve hot.
