Bitterleaf and peanut stew with beef and shrimp — Cameroon's national dish.

Ingredients
- 500 g Bitterleaf
- 1½ cups Peanuts
- 500 g Beef
- 300 g Shrimp
- 150 g Smoked fish
- 2 Onions
- 5 cloves Garlic
- 2 tbsp Ginger
- 1 Scotch bonnet
- 3 tbsp Crayfish powder
- ½ cup Oil
- 2 tsp Salt
- 5 cups Water
Method
- Wash the bitterleaf — Wash and boil the bitterleaf several times, changing the water each time, until the bitterness is manageable.
- Boil the peanuts — Simmer the raw peanuts for 20 minutes, then blend with a little water into a thick smooth paste.
- Cook the meat — Simmer the beef with onion, garlic, ginger and salt until tender.
- Combine — Add the peanut paste to the meat broth and cook 20 minutes, stirring so it does not catch.
- Add the greens — Stir in the drained bitterleaf, smoked fish and crayfish and cook 15 minutes.
- Add shrimp — Add the shrimp and oil and cook 5 minutes more.
- Ndolé is ready — Serve with plantain, rice or miondo.
