
Ema Datshi
Chilies stewed with yak cheese — Bhutan's national dish.

Ingredients
- 400 g Green chilies
- 250 g Fresh white cheese
- 1 Onion
- 5 cloves Garlic
- 2 Tomatoes
- 3 tbsp Butter
- 1 tsp Salt
- 1 cup Water
Method
- Prepare the chilies — Split the chilies lengthwise — in Bhutan chilies are the vegetable, not the seasoning, so use them generously.
- Start the pot — Put the chilies, sliced onion, garlic and tomato in a pot with water and salt.
- Boil — Cook uncovered for 10 minutes until the chilies soften.
- Add cheese — Crumble in the cheese and butter, cover, and cook 5 minutes without stirring.
- Stir once — Stir gently just once so the cheese melts into a loose sauce rather than turning stringy.
- Ema Datshi is ready — Serve with red rice.
