Ingredients

  • Basmati rice, soaked500 g
  • Onions, fried crisp (birista)3
  • Yogurt200 g
  • Mint and coriander1 cup
  • Ghee5 tbsp
  • Saffron in warm milk4 tbsp
  • Whole spices (bay, cardamom, cloves, cinnamon, shahi jeera)1 tbsp
  • Biryani masala2 tbsp
  • Ginger-garlic paste2 tbsp
  • Lemon1
  • Salt1 1/2 tsp
  • Green chillies4
  • Kewra water1/2 tsp

Method

  1. MarinateMarinate the meat with yogurt, ginger-garlic, biryani masala, half the fried onions, mint and lemon.
  2. RiceParboil the rice with whole spices until 70% cooked.
  3. LayerLayer meat and rice in a heavy pot; top with fried onions, herbs, saffron milk and ghee.
  4. DumSeal the lid with dough; cook on dum 45 minutes (raw chicken cooks in the steam).
