Ingredients

  • Beef shin, cubed1.2 kg
  • Lard or sunflower oil3 tbsp
  • Onions, finely chopped3
  • Hungarian sweet paprika3 tbsp
  • Hungarian wax pepper (or green pepper)1
  • Tomato1
  • Salt1 1/2 tsp
  • Black pepper1/2 tsp
  • Garlic cloves2
  • Water300 ml

Method

  1. BaseSoften onions in lard until golden; off the heat stir in paprika (never burn it).
  2. StewAdd the meat, garlic, pepper and tomato; cover and braise in its own juices 2 hours, adding splashes of water.
  3. ServeServe with nokedli or potatoes and pickles.
