- Sour orange or lime juice60 ml

- Vegetable oil4 tbsp

- Oil for frying600 ml
Method
- WashWash the meat with sour orange and lime; rub with the epis, onion, thyme, cloves and pepper; marinate overnight.
- BraiseSimmer in the marinade with water 35 minutes until tender and the liquid has almost evaporated.
- FryFry the pieces in hot oil until dark and crisp.
- ServeServe with pikliz, bannann peze and the reserved sauce (sos ti malis).
