Method

  1. BlanchBlanch tofu in salted water.
  2. FryFry beef until crisp, then bean paste and black beans until red.
  3. SimmerAdd stock and tofu; simmer 5 minutes; thicken in stages.
  4. FinishTop with ground Sichuan pepper and spring onion.
