Method
- DesaltSoak the salted meats 24 hours, changing the water often.
- BeansSimmer the beans with bay leaves 1 hour.
- MeatsAdd the meats in order of toughness and simmer 2 hours more.
- SofritoFry bacon, onion and garlic and stir in with a ladle of mashed beans to thicken.
- RiceFry garlic and rice in oil, add water and salt, cover and cook 18 minutes.
- FarofaFry onion in butter, add the manioc flour and toast, stirring, 5 minutes until golden.
- CouveShred the couve very finely and sauté with garlic 2 minutes.
- ServeServe with rice, farofa, couve and orange slices.
