Method

  1. PrepBoil the tongue 2 1/2 hours, peel and slice.
  2. SauceFry onion, garlic, ají, cumin and oregano.
  3. SimmerAdd the meat and water and simmer 30 minutes.
  4. ServeServe with rice, chuño, potato and salad.
