Ingredients

For 16 servings. All ingredients are generic, never brand names.

  • Full-fat milk2 L
  • Lemon juice or vinegar4 tbsp
  • Sugar500 g
  • Water1 L
  • Khoya100 g
  • Plain flour2 tbsp
  • Oil or ghee for frying500 ml

Method

  1. ChhanaBoil the milk, add lemon juice, strain the curds through muslin, rinse and hang 30 minutes.
  2. KneadKnead the chhana on a plate 8 minutes until smooth.
  3. ShapeKnead with khoya and flour and shape ovals.
  4. FryFry slowly until almost black.
  5. SoakSoak in warm syrup 2 hours.
