- Butter (for the rice)120 g
- Saffron, steeped in 3 tbsp hot water1 pinch
- Lavash or flatbread (gazmag base)1 sheet

- Mixed herbs2 cups
- Butter (garnish)40 g
Method
- SoakRinse the rice until clear and soak in salted water 1 hour.
- ParboilBoil in plenty of salted water 6 to 7 minutes until just soft outside; drain.
- SteamButter a heavy pot, line with lavash (gazmag), layer in the rice, pour over melted butter and saffron water, wrap the lid in a towel and steam on very low heat 45 minutes.
- GarnishBake the eggs beaten with herbs in butter at 180C for 20 minutes; cut into wedges.
- ServeServe the rice on a platter with the crisp gazmag and the garnish (gara) on the side.
