Ingredients

For 6 servings. All ingredients are generic, never brand names.

  • Basmati rice500 g
  • Salt2 tbsp
  • Butter (for the rice)120 g
  • Saffron, steeped in 3 tbsp hot water1 pinch
  • Lavash or flatbread (gazmag base)1 sheet
  • Lamb shoulder, cubed800 g
  • Onions, sliced3
  • Butter or ghee (garnish)80 g
  • Turmeric1/2 tsp
  • Dried apricots100 g
  • Raisins80 g
  • Chestnuts, peeled150 g

Method

  1. SoakRinse the rice until clear and soak in salted water 1 hour.
  2. ParboilBoil in plenty of salted water 6 to 7 minutes until just soft outside; drain.
  3. SteamButter a heavy pot, line with lavash (gazmag), layer in the rice, pour over melted butter and saffron water, wrap the lid in a towel and steam on very low heat 45 minutes.
  4. GarnishFry the lamb in butter until browned, add onions, turmeric and salt and cook covered 1 hour until tender. Warm the fruit and chestnuts in butter alongside.
  5. ServeServe the rice on a platter with the crisp gazmag and the garnish (gara) on the side.
