Ingredients

Method

  1. StockSimmer the meat with one onion, peppercorns and 6 cups water 75 minutes, then strain, keeping meat and broth apart.
  2. SoakSoak the rice 45 minutes and drain.
  3. FryBrown the second onion, return the meat and toss with cumin and cardamom.
  4. Cook and steamAdd rice and 5 cups stock, boil until absorbed, cover and steam 25 minutes.
