
Doubles
Two soft fried breads holding curried chickpeas.

Ingredients
- 3 cups Flour
- 2 tsp Yeast
- 1 tsp Turmeric
- 1 tsp Cumin
- 1¼ cups Warm water
- 2 cups Chickpeas
- 1 Onion
- 5 cloves Garlic
- 2 tbsp Curry powder
- 1 Scotch bonnet
- ¼ cup Coriander
- 4 cups Frying oil
- 2 tsp Salt
Method
- Make the bara dough — Mix the flour, yeast, turmeric, cumin, salt and warm water into a soft sticky dough.
- Prove — Cover and rise 90 minutes until doubled.
- Make the channa — Fry the onion and garlic, add curry powder with a splash of water, then the cooked chickpeas and simmer 25 minutes until soft and saucy.
- Shape the bara — With oiled hands flatten small balls into thin discs.
- Fry — Fry each for 20 seconds a side — they should stay soft, never crisp.
- Doubles are ready — Spoon channa onto one bara, top with another, and add pepper sauce and chutney.
