Method

  1. Make the broth — Simmer the brisket with garlic and spring onion for 2 hours, skimming carefully for a clear broth.
  2. Chill it — Strain, cool, and refrigerate until very cold — some ice crystals should form; naengmyeon must be served near freezing.
  3. Pickle the radish — Slice the radish thin and pickle in vinegar and salt for 2 hours.
  4. Cook the noodles — Boil the buckwheat noodles 3 minutes only, then rinse under cold running water until completely cold and squeaky.
  5. Assemble — Put noodles in a bowl, add the icy broth, and top with sliced beef, radish, cucumber, pear and half an egg.
  6. Naengmyeon is ready — Serve vinegar and mustard alongside to adjust at the table.
