
Egusi soup
Melon seed stew with leafy greens and meat, thick and nutty.

Ingredients
- 2 cups Melon seeds
- 400 g Spinach
- 500 g Beef
- 200 g Smoked fish
- ½ cup Red palm oil
- 1 Onion
- 2 Scotch bonnet
- 3 tbsp Crayfish powder
- 4 cups Stock
- 2 tsp Salt
Method
- Cook the meat — Simmer the beef with onion and salt until tender, keeping the stock.
- Grind the seeds — Grind the melon seeds to a coarse powder and mix with a little water into a thick paste.
- Heat the palm oil — Warm the palm oil in a pot, then add the blended pepper and onion and fry for 5 minutes.
- Add the egusi — Drop the melon paste in spoonfuls and let it fry undisturbed for 10 minutes so it forms lumps.
- Add stock and fish — Pour in the stock with the smoked fish and crayfish and simmer for 20 minutes.
- Add the greens — Stir in the chopped spinach and cook 5 minutes more.
- Egusi is ready — Serve with pounded yam or rice.
