Ingredients

Method

  1. Toast the flour — Bake the flour, stirring often, for 45 minutes until it turns deep golden and smells nutty — this slow toasting is the whole dish.
  2. Toast the nuts — Fry the almonds until golden, then toast the sesame separately until it pops.
  3. Grind — Grind most of the almonds and sesame, keeping some whole.
  4. Combine — Mix everything with cinnamon, aniseed, sugar and salt.
  5. Add butter — Pour in the melted butter and work it in until the mixture clumps when squeezed.
  6. Sellou is ready — Press into a mound, decorate with whole almonds, and serve in small spoonfuls.
