Method

  1. Layer the pot — Put a layer of onion and carrot at the base, then the lamb, then thickly sliced potato on top.
  2. Season — Salt and pepper between the layers and tuck in the thyme and bay.
  3. Add water — Pour in enough water to just cover the meat, not the top potatoes.
  4. Simmer — Cover and cook very gently for 2 hours — the top potatoes steam while the lower ones dissolve and thicken the broth.
  5. Finish — Stir in the butter and check the seasoning.
  6. Irish Stew is ready — Scatter with parsley and serve with soda bread.
