
Irish stew
Lamb, potato and onion simmered simply until everything melts together.

Ingredients
- 1 kg Lamb
- 1 kg Potatoes
- 3 Onions
- 3 Carrots
- 3 sprigs Thyme
- 2 Bay leaves
- ¼ cup Parsley
- 3 tbsp Butter
- 2 tsp Salt
- 1 tsp Black pepper
- 5 cups Water
Method
- Layer the pot — Put a layer of onion and carrot at the base, then the lamb, then thickly sliced potato on top.
- Season — Salt and pepper between the layers and tuck in the thyme and bay.
- Add water — Pour in enough water to just cover the meat, not the top potatoes.
- Simmer — Cover and cook very gently for 2 hours — the top potatoes steam while the lower ones dissolve and thicken the broth.
- Finish — Stir in the butter and check the seasoning.
- Irish Stew is ready — Scatter with parsley and serve with soda bread.
