
Chole Bhature
Spiced chickpeas with deep-fried puffed bread.

Ingredients
- 2 cups Chickpeas
- 3 cups Flour
- ½ cup Yogurt
- 2 Onions
- 4 Tomatoes
- 2 tbsp Ginger
- 6 cloves Garlic
- 2 tbsp Chole masala
- 2 Tea bags
- 4 cups Frying oil
- 2 tsp Salt
- 5 cups Water
Method
- Soak and boil — Soak the chickpeas overnight, then pressure-cook them with tea bags — the tea gives chole its dark colour.
- Make the masala — Fry the onion, ginger and garlic until brown, add tomato and chole masala, and cook until the oil separates.
- Simmer — Add the chickpeas with their liquid and cook 25 minutes, mashing a few to thicken.
- Make the bhatura dough — Knead the flour with yogurt, salt and warm water into a soft dough and rest 3 hours.
- Fry the bhature — Roll and slide into hot oil, pressing gently so they balloon, then flip once.
- Chole Bhature is ready — Serve immediately with onion and pickle.
