
Baleadas
Thick flour tortilla folded over beans, cheese and cream.

Ingredients
- 4 cups Flour
- 1½ cups Warm water
- ½ cup Oil
- 1 tsp Baking powder
- 2 cups Red beans
- 1 Onion
- 3 cloves Garlic
- 1 cup Sour cream
- 1 cup Crumbly white cheese
- 4 Eggs
- 2 tsp Salt
Method
- Make the dough — Mix the flour, baking powder, salt, oil and warm water into a soft dough and rest 30 minutes.
- Cook the beans — Fry the onion and garlic, add the cooked beans, and mash into a thick refried paste.
- Roll — Roll the dough into large thin rounds, thicker than a Mexican tortilla.
- Griddle — Cook on a dry hot pan for 1 minute a side until puffed and lightly spotted.
- Fill — Spread beans over half, add cream, crumbled cheese and scrambled egg.
- Baleadas are ready — Fold in half and eat hot.
