
Horiatiki
The real Greek salad — no lettuce, a slab of feta on top.

Ingredients
- 5 Tomatoes
- 2 Cucumber
- 1 Red onion
- 1 Green pepper
- ¾ cup Kalamata olives
- 250 g Feta cheese
- ½ cup Olive oil
- 1 tbsp Oregano
- 2 tbsp Red wine vinegar
- 1 tsp Salt
Method
- Cut large — Cut the tomatoes into thick wedges and the cucumber into chunky half-moons — never dice a horiatiki small.
- Combine — Add the sliced onion, pepper rings and olives.
- Season — Salt the vegetables lightly and add the vinegar.
- Add the feta — Lay a whole slab of feta across the top rather than crumbling it.
- Dress — Pour a generous amount of olive oil over and dust the feta with oregano.
- Horiatiki is ready — Serve with bread to soak the juices at the bottom.
