
Misir Wat
Red lentil stew rich with berbere, Ethiopia's everyday comfort.

Ingredients
- 2 cups Red lentils
- 3 Onions
- 3 tbsp Berbere spice blend
- 4 tbsp Spiced clarified butter
- 5 cloves Garlic
- 1 tbsp Ginger
- 2 tbsp Tomato paste
- 2 tsp Salt
- 5 cups Water
Method
- Cook the onions — Cook the finely chopped onions in a dry pot for 20 minutes until soft and reduced.
- Add fat and aromatics — Stir in the butter, garlic and ginger and cook 5 minutes.
- Bloom the spice — Add the berbere and tomato paste and fry for 4 minutes until darkened.
- Add the lentils — Rinse the lentils and stir them in with the water and salt.
- Simmer — Cook uncovered for 35 minutes, stirring often, until thick and creamy.
- Misir Wat is ready — Serve hot with injera.
