
Sancocho
Seven-meat stew with root vegetables, for celebrations.

Ingredients
- 400 g Beef
- 400 g Pork
- 400 g Chicken
- 400 g Cassava
- 400 g Yam
- 2 Plantains
- 300 g Pumpkin
- 2 Corn cobs
- 2 Onion
- ½ cup Cilantro
- 6 cloves Garlic
- 1 tbsp Oregano
- ¼ cup Lime juice
- 2 tsp Salt
- 12 cups Water
Method
- Season the meats — Marinate all the meats with lime, garlic, oregano and salt for 1 hour.
- Brown in stages — Sear each meat separately so each keeps its own character.
- Build the pot — Return them all with water and simmer 1 hour.
- Add roots in order — Add cassava and yam first, then pumpkin and corn 15 minutes later, then plantain last — they cook at different speeds.
- Thicken — Mash a little pumpkin into the broth to thicken it naturally.
- Sancocho is ready — Finish with cilantro and serve with white rice and avocado.
