
Nom Banh Chok
Rice noodles under a green fish and lemongrass gravy.

Ingredients
- 500 g Rice noodles
- 500 g White fish
- 4 stalks Lemongrass
- 2 tsp Turmeric
- 2 tbsp Galangal
- 4 Kaffir lime leaves
- 400 ml Coconut milk
- 3 tbsp Fish sauce
- 200 g Bean sprouts
- 2 Cucumber
- 1 cup Banana blossom
- 1 tsp Salt
Method
- Poach the fish — Simmer the fish until just cooked, then flake it, keeping the broth.
- Pound the paste — Pound the lemongrass, galangal, turmeric and lime leaf into a fine green paste.
- Make the gravy — Cook the paste briefly, add the flaked fish, broth and coconut milk and simmer 15 minutes.
- Prepare the raw plate — Shred the cucumber, banana blossom and sprouts.
- Nom Banh Chok is ready — Put noodles in a bowl, ladle the warm gravy over, and pile the raw vegetables on top.
