
Seswaa
Beef boiled and pounded until it shreds — the national dish.

Ingredients
- 1.5 kg Beef
- 1 Onion
- 2 Bay leaves
- 1 tsp Black pepper
- 2 tbsp Salt
- 4 cups Water
Method
- Boil simply — Put the beef in a heavy pot with onion, bay, salt and just enough water to cover.
- Cook long — Simmer 3 hours until the meat is falling apart — seswaa uses almost no seasoning, so the meat must be truly tender.
- Reduce — Cook uncovered at the end until nearly all the liquid has gone.
- Pound — Pound the meat in the pot with a wooden stick until it shreds into soft threads.
- Seswaa is ready — Season with salt and pepper and serve with pap and morogo.
