Method
- MarinateMarinate the meat with yogurt, ginger-garlic, biryani masala, half the fried onions, mint and lemon.
- RiceParboil the rice with whole spices until 70% cooked.
- LayerLayer meat and rice in a heavy pot; top with fried onions, herbs, saffron milk and ghee.
- DumSeal the lid with dough; cook on dum 1 hour (marinade pre-cooked 40 minutes).
