- Conch (lambi), cleaned and pounded1 kg
Method
- SeasonSeason the conch with lime, garlic and salt.
- BaseSauté the onion in the oil; add the epis, thyme, cloves and whole pepper and cook 2 minutes.
- MeatPressure-cook or simmer the pounded conch 1 hour until tender; add to the sauce.
- SauceAdd tomato paste, tomatoes and peppers; simmer 20 minutes into a Creole sauce.
- ServeServe with diri kole or white rice.
