Method
- DoughKnead masa with warm water until soft.
- FillingCook beef with tomato and pepper.
- ShapePat a ball flat, add filling, close and pat into a thick disc.
- CookCook on a hot comal 4 minutes per side.
- CurtidoScald cabbage, then toss with carrot, onion, vinegar, oregano and chilli; ferment a few hours.
- SalsaBoil tomatoes with onion and garlic; blend thin with oregano.
