Method
- DoughKnead a soft dough; rest.
- LayerRoll thin, brush with oil, roll up into a coil and rest.
- CookRoll out and cook on a hot pan with oil until flaky (sabaayad).
- StewFry onion, garlic and chilli in oil until golden. Add xawaash and tomatoes; add the main ingredient and water; simmer 1 1/2 hours.
